LEMON POPPY SEED MUFFINS

🍋✨ Sweet, zesty, and perfectly poppy! This Lemon Poppy Seed recipe is a burst of sunshine in every bite. Whether you're looking for a quick breakfast, a delightful snack, or a crowd-pleasing treat, this recipe has you covered. 🍰🌼


Ingredients

2 Large eggs

1 cup Coconut oil (or 1/2 cup coconut oil and 1/2 cup applesauce)

2/3 cup Almond milk (or any non-dairy milk of your choice)

2 tsp Vanilla extract

2 3/4 tbsp Poppyseeds

1/2 cup Lemon zest (about 4 medium-sized lemons)

2 1/2 cup All-purpose flour (or gluten-free flour blend - I used a almond flour/coconut flour blend)

2 tsp Baking powder

1/2 tsp Salt

1 cup Dairy-free yogurt


Optional: Glaze topping (will be a little extra)

1 cup Powdered sugar

1 1/2 tbsp Lemon juice

1 tbsp Almond milk (or any non-dairy milk of your choice)


Optional: Extra lemon zest for decorating


Steps

  1. Preheat the oven to 375F. Place muffin liners in the pan. Set aside.

  2. Beat the sugar and coconut oil on high speed until smooth and creamy, about 2 minutes.

  3. Add the eggs, almond milk, and vanilla extract and beat on high speed for 1 minute until well combined.

  4. Add the poppyseeds and lemon zest and mix well.

  5. In a separate bowl, stir the flour, baking powder, and salt until well distributed.

  6. Mix the dry ingredients into the wet ingredients on low speed just until it's no longer lumpy. Do not overmix.

  7. Stir in the yogurt until well distributed.

  8. Spoon the batter evenly into each muffin liner, filling each one to the top of the liner.

  9. Bake the muffins for about 20-22 minutes or just until a toothpick comes out clean.

  10. Allow the muffin pans to cool on the wire rack for 5 minutes before removing from pans. Transfer to a wire rack to cool completely.

  11. Optional: Glaze topping

    1. Whisk together all the ingredients for the glaze, add lemon juice until desired consistency is reached.

    2. Drizzle over cooled muffins.

  12. Optional: Top with extra lemon zest.


TIP: All refrigerated items should be at room temperature so the batter mixes together easily and evenly.
